Big Bold Bacon Burgers

Ingredients

8 slices bacon
2 pounds ground beef (85% lean)
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
4 teaspoons Steakhouse Rub (below)
1 cup KC Masterpiece® Original Barbecue Sauce
4 hamburger buns
Lettuce, sliced tomatoes, and sliced onions (optional)

Steakhouse Rub

2 teaspoons four-peppercorn blend, or 1 teaspoon black peppercorns
1 teaspoon yellow mustard seeds
1 teaspoon cumin seeds
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon sweet paprika
1 teaspoon garlic powder
1 teaspoon onion powder

Makes about 3 tablespoons, enough for 4 pounds of meat.

Preparation

Prep Time: 15 minutes
Cook Time: 20 minutes

Cook the bacon in a medium-size skillet over medium heat until crisp and browned, about 8 minutes. Transfer the bacon to paper towels to drain and cool. Cut each bacon strip in half.

Mix the ground beef, salt, and pepper in a medium bowl. Form into four thick 4-inch patties. Handle the meat lightly and do not pack it, or the burgers will be coarse-textured and dry. Sprinkle the rub on both sides of the patties. Place on a wax paper-lined plate, cover, and let stand at room temperature while building the fire.

Build a charcoal fire in an outdoor grill and let burn until the coals are almost completely covered with white ash.

Lightly oil the grill grate. Place burgers on the grill and cover. Cook, turning often, until the burgers are well browned and feel somewhat firm when pressed in the center, about 6 minutes for medium rare, or longer if desired. During the last 2 minutes, brush the burgers with KC Masterpiece® Original Barbecue Sauce so they are coated on both sides, and place the buns on the grill to toast lightly and warm through.

Place burger on each bun with 4 half-slices of bacon, and serve hot, with lettuce, tomatoes, and onions passed on the side.

Serve on Dixie Ultra® plates and make clean-up a breeze.
